Every day is Meatball Day!

Turkey Meatballs
Original recipe from Tosca Reno(With modifications)
Contributed by Tracy Cook

 3 Lbs. of Ground Turkey
1 Cups of Oatmeal
(Bob’s extra thick whole grain is great)
16 oz. Plain Yogurt
(Look for the yogurt with the lowest sugar content, I like 0% Fage)
1/2 Onion finely chopped
2 Eggs lightly beaten
5-7 Cloves Garlic, passed through a garlic press
1/3 Cup Dijon Mustard (or more if you like flavor)
*5 -6 Tbs. of Crushed Red Pepper *(If you like them a little spicy)
2 Tsp. of Freshly Ground Pepper

Preheat Oven to 400*
Place all above ingredients in a large mixing bowl
Make meatballs approximately the size of a golf ball
Bake for 20 minutes…
They will not appear to be fully cooked…
they will continue to brown
after they cool.
These are an excellent snack to grab on the run
You can double or triple the recipe and freeze!
You can also serve over spaghetti squash  or other veggies for dinner!

Thanks Tracy for sharing this recipe with our team!!!
