Super Bowl doesn't have to mean Super Unhealthy! Healthy Snacks for Super Bowl Sunday




Super Bowl snacks usually mean a lot of fried foods & high fat dipsbut yummy snacks CAN be healthy!
With Super Bowl Sunday coming up we thought it would be a good time to share some healthy snack ideas & recipes with you!

Everyone knows you can’t watch football with Buffalo Wings! So we found a healthier version for you to try!!

 Healthy Baked Buffalo Tenders

Ingredients
  • 1.22 lbs of chicken tenderloin
  • 4 Tbsp of light Sour Cream
  • ****seasoning****
  • 1 tsp grill seasoning
  • 3/4 tsp cumin powder
  • 3/4 tsp paprika
  • 3/4 tsp chipotle powder
  • ******************************
  • 1 cup seasoned Panko breadcrumbs
  • cooking spray
  • 8 Tbsp Red Hot Wings Sauce (or more; if desired)
Instructions
1.     In a med/large mixing bowl combine sour cream & seasoning. Add chicken tenderloins & mix to coat , set aside and marinate for 1 hour (can marinate overnight).
2.   When ready to cook preheat oven to 425 degrees. Prepare baking dish with cooking spray. Spread Panko in a shallow flat dish. Coat each tenderloin with panko breading and place in baking dish. Cook for 25 minutes.
3.   Remove & increase oven temp to 500 degrees. Add 1 Tbsp (or more) of Red Hot Wings Buffalo sauce to each tender. Return baking dish to oven and cook an additional 7 minutes.
4.   Serve with Blue Cheese or Ranch Dressing.
Makes 8 Buffalo Tenders. 
Nutrition for one Tender: Weight Watchers Points +2 ~ Calories 102.2 ~ Fat1.3 g ~ Carbs 5.6 g ~ Fiber 0.3 g ~ Protein16.2 g We have not made these yet but one thing I plan on doing is exchanging the sour cream for plain Greek yogurt! Also look for low fat dressing or make your own! 

So much better than friedBaked Chicken Tenders 
Uncooked Chicken Breasts Tenders
 1/2 c parmesan cheese
1 c Greek yogurt
 1 tsp garlic powder
 1 1/2 tsp seasoning salt
1/2 tsp pepper,
Spread mix over chicken breasts
 Bake at 375 45 min. 
This recipe didn't give an exact amount for the chicken breasts so I plan on buying the amount of chicken I need and extra ingredients for the breading so I can add more as needed!
Also I plan on making my own dipping sauce with mustard & local honey! Yum!
 






A new twist on Mexican Layer Dip.
Mediterranean Layer Dip

Tub of   Plain hummus
Diced tomatoes 
Diced cucumbers 
Crumbled feta 
Diced olives 
Basil for garnish 
Pita chips

Spread hummus across bottom of shallow bowl or dish. Layer with diced tomatoes, cucumbers, olives. Sprinkle with crumbled feta. Garnish with fresh basil. Serve with pita chips. Enjoy!
 Other versions I thought would be tasty...adding roasted red peppers or exchanging the diced tomatoes for chopped sun-dried tomatoes!



Avocado Fries
  • 1 Avocado
  • 3/4 Cup Panko Bread Crumbs
  • 2-3 tbsp Flour
  • 1 Egg
  • Parmesan Cheese
  • Salt & Pepper
  • Canola Oil 
I haven’t tried this recipe with any other type of Avocado, but I would recommend using one that isn’t quite ripe yet, and still stiff when squeezing it. Store it in your fridge before making these, this way you don’t have to worry about it being too soft when you bread and cook it.
Take two plates and a bowl, put your panko and flour on the plates and scramble an egg into your bowl. Shred some Parmesan cheese into your bowl of panko and add salt & pepper to taste (mix it around and get your finger wet, dip it in the panko and give it a taste until it gets to your liking). Slice your avocado into fry-like chunks, cover with flour, then egg and finally bread it with the panko and put it on a plate.. Repeat this until all your avocado is done.
While you are breading everything, get a pan ready on medium-high heat, with enough oil to coat the bottom of the pan. Once the pan is evenly heated, drop all your avocado fries in and cook each side until golden brown!
 
The recipe calls for garlic dip so I plan on using Sabra Garlic Greek Yogurt Dip!







And don’t forget the meatballs that we shared last month!






We also really love Guacamole! Here are 2 ways we like to make it!
This is the one we use when we want to whip it up quick for lunch!


Texas Guacamole
2-3 Ripe Avocados mashed
1 Tbs. Minced Garlic
¼ - ½ tsp Tabasco sauce
Mix well and serve! We usually use the multigrain tortilla chips or the blue corn with flaxseeds!

This one we made up after trying On the Borders


Guacamole Live!
2-3 Ripe Avocados chopped not mashed
1 jalapeño chopped (you can buy it canned or carefully chop your own with gloves)
Sea Salt to taste
Juice of 1 lime
¼ cup diced tomatoes

¼ cup finely chopped red onion


Mix ingredients together carefully as not to mash your Avocado.
Enjoy!

Add fruit & veggie tray.....
Maybe some Wasa flatbreads or some Blue Diamond Nut Thins or Nut Chips....




And you have yourself a guilt free party!
